I'm a newbie with Linux and I'm looking for a good, reliable method to backup my databases.

I do have access to my WebHost Manager as well as cPanel, but I just don't have the knowledge to make backups of my databases and have them available to that I can download them for a local copy in case anything were to ever happen to my server.

Any help on this is GREATLY appreciated.

Yeah, and web host manager will allow you to configure the whole site for backup either on a local drive, or FTP to another server. The site backup would include the site, email and databases. Everythign for the site. Web Host Manager can be configured to keep daily, weekly and monthly backups and rotate them automatically.
