Not in theme.inc... "table align" is not to be found in any files...

The table align was causing some really freaky problems on certain browsers. Especially with the latest changes. It was being applied to each table to try and make it line up properly but wasn't working the way it should. With 6.0, for now, it just requires adding an open/close table that is aligned the way you want into the ubbt_header.tmpl and ubbt_footer.tmpl templates.

Hmm, I suppose that will suffice. :/ I was about to get all annoyed about having to search and replace in all the templates.

Actually, you just need to change it from center to blank, so it will be the default... I remembered from past versions, it worked this way as well. Details here.
