www.linuxiso.org has the ISO's to make your own Linux install CDs.

I'm really not familiar with iso's, can I just download their provided iso and Easy CD Creator will recognize that iso file and will know what to do with it? How does that work?

download the .iso file
in ez cd creator.. i think its the option under.. File called "Create CD from Image"
browse to the folder containing your downloaded .iso image. The iso file wont appear in the little file menu until you change the option from .cif to .iso
then burn it and boot from it :P
